Ceviche, is a seafood dish originating from Peru. It is typically made from fresh raw fish or seafood that is cured in citrus juices, such as lemon or lime. Curing is technique that does not require heat or fire to cook. Chef Iskander shows this using fresh scallops. He incorporates the ceviche with the Vietnamese Roll. The end result, a light healthy and colourful snack that’s pleasing to the eyes and tasty as well.
